My daughter got to try green eggs and ham at
preschool last week (report: yummy!), so now the pressure's on to make St. Patrick's Day fun at home. This means whipping up something fun and green and delicious. Perhaps this Peppermint Patty Green Smoothie, courtesy of
Sari Davidson-Crevin, will do the trick!
Peppermint Patty Green Smoothie Recipe
Serves: 2
Ingredients
3/4 cup almond milk
1 cup spinach, about 1 handful
1 frozen banana
2 tablespoon fresh mint leaves, stems removed or 1/8 teaspoon peppermint extract
1/4 teaspoon vanilla extract
1 heaping tablespoon chocolate chips
Instructions
1. Place all the ingredients, except chocolate chips into your blender.
2. Start on low speed, and increase to high.
3. Blend until smooth, about 1 minute.
4. Add the chocolate chips and blend for a few seconds, just long enough to break them down into smaller pieces.
5. Enjoy!
A big thanks to Sari for the recipe! My blender has been on a hiatus because it's been too cold for smoothies, but I think I'll have to bust it out today. And yay for sneaking greens in a smoothie!
